Healthy Banana Bread
You can use flax or chia eggs in place of chicken eggs. 1 egg= 1tbsp chia or ground flax seeds + 3 tbsp water. Mix & let sit for 15 min until a slur forms.
4 ripe bananas, mashed*
1/3 cup coconut oil, melted
4 eggs (use chia or flax eggs as a substitute)
1 tsp vanilla extract
1 1/2 tsp cinnamon
1/2 cup coconut flour (no substitutions, this recipe is for coconut flour only)
1 tsp baking soda
1/4 tsp sea salt
Optional: 1/3 cup dark chocolate chips, walnuts or pecans
preheat over to 350 degrees
mix everything together in a medium bowl
pour mixture into a bread pan, lined with parchment paper
bake for 60 minutes or until a knife inserted comes out clean, let cool before cutting
*If bananas are not ripe enough, add up to 1/3 cup real maple syrup to sweeten.
Gluten free, dairy free, soy free, can be made vegan using flax or chia seed slur.
