Kombu

This sea vegetable is a new favoite in my pantry for the following reason:

1. It's so easy to use

2. I feel good knowing I'm making/eating a meal that provides a range of nutrients & digestibility benefits

3. If kept air tight, dried Kombu will stay fresh for several years

What is Kombu you ask?  It's a nutritional POWERHOUSE from the sea.  This sea vegetable is packed full of essential minerals & really benefits the body:

  • High in Iodine - essential nutrient for normal thyroid function
  • Good source of Calcium & Iron - Calcium helps serve the skeletal system and Iron brings oxygen to your cells   
  • Vitamins A & C - support eyes and immunity
  • Alkalizing - when your body is in an alkaline state, you are less likely to suffer from chronic diseases
  • Reduces blood cholesterol & hypertension
  • Blood purifying
  • Detoxifying 

 

Another benefit: Digestibility

Let's talk Glutamic Acid: it's is a 'non-essential' classified amino acid that is very common in plants and animals. Besides being a building block of protein, glutamic acid is vital in the transmission of nerve impulses, and is even manufactured in the brain. The glutamic acid in Kombu helps to break down the tough fibers in foods like beans. 

If you could use some help digesting beans or other foods, adding a piece of soaked kombu to your dish when you start cooking will start the process to help with digestibility.

 

The best part: It's easy to incorporate in your diet

Break off a strip of dried Kombu and throw it in a pot of grains, soup or beans.  Once your meal is cooked, you can discard the Kombu & you'll be left with a NUTRIENT-DENSE meal! Kombu can be found in most grocery stores in the Asian foods section.
